Lemon Herb Salmon

Ingredients:

2 salmon fillets

2 tablespoons olive oil

1 tablespoon fresh lemon juice

1 teaspoon garlic powder

1 teaspoon dried oregano

½ teaspoon sea salt

½ teaspoon black pepper

1 zucchini, sliced

1 red bell pepper, sliced

1 cup cherry tomatoes

1 teaspoon balsamic vinegar

Instructions:

Preheat oven to 400°F and line a baking sheet with parchment paper.

In a small bowl, mix olive oil, lemon juice, garlic powder, oregano, salt, and pepper.

Place salmon fillets on one side of the baking sheet and brush with the lemon herb mixture.

Toss zucchini, bell pepper, and cherry tomatoes with balsamic vinegar and a drizzle of olive oil. Spread them on the other side of the baking sheet.

Bake for 15-18 minutes or until salmon is flaky and vegetables are tender.

Serve warm and enjoy a nutritious, flavorful meal!
