

Ingredients:
4 cups cauliflower florets
8 oz shredded sharp cheddar cheese, divided
8 oz shredded Monterey Jack cheese, divided
1 1/2 cups low-fat plain Greek yogurt
1 1/2 cups green onions, sliced
6 slices turkey bacon, cooked and crumbled
1 clove garlic, grated
1/2 teaspoon pepper
1/4 teaspoon salt

Instructions:

Preheat oven to 350°F.

Steam cauliflower florets until tender.

Mix 8 oz cheddar, 8 oz Monterey Jack, and yogurt together. Stir in green onions, bacon, and garlic.

Drain cauliflower and combine with cheese mixture. Season to taste.

Pour into a casserole dish, top with remaining cheese, and bake for 25 minutes covered, then uncover and bake until bubbly.
